I almost lit the dog on fire while making bisque.

What a picturesque winter (fall?) evening. Delicata Squash and Sweet Potatoes roasting in the oven, a fire blazing, and me sipping warm pumpkin soy milk. So perfect it’s almost cliche. The dog came and sat next to me looking a little sheepish, and I noticed she had something black on her side. At first I thought it was a bug, but when I looked closer it was a big singe mark! She was laying in her dog bed by the fire, and I saw that I hadn’t shut the grate all the way. When I picked up her bed there was a huge melted spot, probably from an ember. At least it was all synthetic so it melted rather than torched! Note to self: CLOSE THE SCREEN.

Back to those veggies in the oven… After seeing what a stir the Delicata Squash Bisque made on the blogosphere, I had been waiting quite some time to give it a try. We haven’t had Delicata’s at the supermarket all this time, but last night I found some in the organic section. I grabbed some of those, and some gorgeous sweet potatoes with the intention on finally making that bisque.

I added two roasted sweet potatoes to the recipe, but other than that followed it just about exactly. I just roasted them skin on with the squash, but I let them bake an extra 15 minutes or so. When blending, I let it go a really long time, and added the cashew cream to the blender rather than mixing it in. My bisque ended up almost fluffy in texture, and I think it was from the blending. It gave such an amzing mouthfeel. Did I really just use ‘mouthfeel’ in a sentance?

Anyway, give this one a try if you can get your hand on some yummy Delicatas!

    This sounds so delicious, and your dog is hilarious. Please, please adopt me. I will be your 26-year-old vegan baby. I promise I’ll sleep through the night, and you won’t have to carry me because I can already walk.

    That is my grandpuppy you are toasting. You know I had nightmares about you and B giving up meat. Roasted Chihuahua IS NOT FOOD!!!
