Peanut Butter Filled Chocolate Cookies

I found this recipe on flickr, who linked it back to the Vegan Diva, who sited Soy Not Oi, a popular cookbook/zine. B and I are huge fans of both peanut butter and chocolate, and even bigger fans when the two are combined. I figured these would be a great way to break in the new Kitchen Aid, and oh my… I was right! These very well could have been the best cookies I’ve ever made (or eaten for that matter). They tasted something like a Reese’s cup in a cookie… and SURPRISE! They’re veeegaaaan! This recipe, while a little time consuming, will become a staple when entertaining or needing to impress skeptical omni’s.


Cookie Dough:
1-1/2 cup flour
1/2 cup unsweetened cocoa
1/2 teaspoon baking soda
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup Earth Balance, softened
1/4 cup peanut butter
1 teaspoon vanilla extract
Egg replacer equal to two eggs (I used Ener-G)
Cookie Filling:
3/4 cup peanut butter
3/4 confectioners sugar
In a small bowl combine flour, cocoa, and baking soda; blend well. In large bowl, beat sugar, brown sugar, Earth Balance, and 1/4 cup peanut butter until light and fluffy. Add vanilla extract and egg replacer; beat well. Stir in flour mixture until blended and set aside.
In a small bowl, (preferably a vintage Pyrex mixing bowl – I’m kidding! Just seeing if you’re paying attention) combine filling ingredients and blend well. Roll into one-inch balls.


For each cookie, with floured hands (I didn’t flour my hands and it worked out fine, and probably a lot less messy), shape about 1 tablespoon cookie dough around one peanut butter ball, covering completely. Place 2 inches apart on ungreased cookie sheet (I lined the sheet with parchment paper). Flatten slightly, as these cookies don’t really spread! Bake at 375 degrees for 7 – 9 minutes or until set and slightly cracked. Cool on wire racks.

My notes: I got a yield of about 18 cookies. I didn’t pre-roll the peanut butter filling balls, I just rolled out 1″ balls as I went. I used my icecream scoop for the cookie dough, rolled out one scoop and made that into two balls. I like using the ice cream scoop for consistent sizing whenever I make cookies- if they’re all close in size, they cook more evenly.

I am hoping that the new K-aide will make your cookie future much brighter…. Your arm will be much less tired…. and B should be much rounder…!!! They look fab.

Erica- Yes! I’m pretty sure that would work fine. Chances are, these were ‘veganized’ from an original recipe that wasn’t initially vegan.
Mom- Oh man, the kitchen aid made all the difference. The Peanut butter filling whipped up in no time!

When I made mine the dough was way too sticky and viscous to hold it in my hand like in the picture. My yield was 18 HUGE cookies that are baking now- since mine are so big they’re taking longer than 9 minutes to bake. There was also a lot of the peanut butter filling left over but they made delicious snacks. :)

Mmm, I’ve made these before using regular butter and eggs and they were GOOOOOD. One thing that I thought made it easier was flattening out the chocolate mixture between my two hands and then setting the PB ball in the middle and closing the chocolate up around it. Kind of like wrapping it in a blanket? Does that make sense? Either way, these were good, but time consuming!

Ditto to what Kendra said, except mine turned out not so nice. I also subbed non-vegan items for the earth balance and egg replace, doubled the recipe, and ended up with ENORMOUS cake-like cookies that had a ton of flavor as a dough, not so much as a cookie. My recommendation is that if you use non-vegan ingredients, make TINY cookies, space them apart, and double the baking time, as Kendra did. You may consider either cutting back on your wet ingredients, or adding more flour/sugar/cocoa? I’m a baking novice, so I don’t really know. Also, probably should 1/2 the peanut butter filling size.

Wow they look great! I bet it’d work well as a layer rather than individual biccys too. Would have to cut when warm though, I suspect but I’ll know more when I’ve made some!

I just made these with a few alterations..
Sunsweet Lighter Bake Butter and Oil Replacement and Cashew butter.
I ended up with 18 big, rich, and filling cookies that my family found necessary to dunk in milk.
I found that mine didn’t crack on top when they were done, probably due to the stickiness of the Lighter Bake. The dough was easier to work with (still without flour) if I scooped it onto parchment and let it sit for 5-10 minutes.

If you find the mixture too sticky to hold, try lightly greasing your hands with oil and then they don’t stick!! works a treat!

I’ve never had occasion to say anything good about Vegan, and I have my doubts here (doesn’t PB have milk in it? maybe it’s just me), but my past feelings aside: those cookies look good enough to strangle orphans for. If they are truly Vegan, maybe I am all turned around on the subject. I cannot imagine giving up dead cow carcass, but I now see no legitimate reasons why all Vegans must die. What a fantastic site!

I stumbled across these cookies today and just finished baking them. I used 2 eggs and 1/2 cup of country crock instead of the vegan ingredients. They are absolutely incredible. thanks for this!!

Just tried these this weekend and came out great. I put a Hersey’s Kiss inside of each of the peanut butter balls so it was chocolate/peanut butter/chocolate.I’ll have to make some more later this week. Thanks for this.

i made these and they are amazing! the only thing that i changed was adding chia seeds…yes, chia seeds. for those of you who aren’t already eating and cooking with chia seeds, you have got to try them! i get mine at thechiaseed.com but i think you’ll start seeing them in a lot of health food type store soon.

I made these for my boyfriend tonight. He really liked them! They did stick to my hands because they were warm so the cookie and filling kinda stuck, but to push them down, I sprinkled powdered sugar on them and used the bottom of a glass. It worked great. Also, I used real eggs and butter, it was great. Thanks so much for this!!

I ended up getting twelve from the recipe, but I ended up with two extra cookies than I had peanut butter balls…so I threw in a few semi-sweet dark chocolate chips instead. YUM!

Beautiful photos and yummy treats! One suggestion; get away from vanilla extract, (35% booze). Try whole vanilla beans next time. I bought some at an online Juliet Mae Spices. Great value and much better than extract. I talked to a woman at Juliet Mae, and she said if you must use extract at least make it yourself. I googled a recipe and it is as easy as vodka and vanilla beans. Juliet Mae also had a spice called Cinnamon Rose which I plan to try in pie crust. Yum!

Just tried these out- My younger brother (age 16) gives them an A+. I made mine using 1/2c butter and 2 eggs and cooked for 9mins. They came out just fine! Thanks for sharing this recipe!
