Jenny’s Birthday Ladybug Cupcakes

Princess Jenny, Birthday GirlOne of my BFF’s Jenny had her birthday party tonight, and it was a potluck. This might seem innocent enough, but this was my first potluck since becoming vegan. I didn’t realize how much pressure I’d feel- my dish represented veganism to an entire party full of omnivores. THE FATE OF THE MOVEMENT RESTED ON MY SHOULDERS. If I cooked something half-assed, everyone would associate vegan food with that one. single. solitary. dish.

So what do I cook?! I naturally went to my comfort zone and decided cupcakes were the way to go. I’d try something different though, and spend a lot of time and make them perfect. Ben helped me pick out the Red Velvet cupcake recipe from VCTOTW. I decided on a Ladybug design for a few reasons- Jenny and I met in our Sorority Alpha Sigma Alpha, whose mascot is the Ladybug. We have matching Ladybug tattoos, and it’s always been a thing for us. Also, a few nights ago I saw some Ladybug cuppies on Flickr and they totally inspired me!

This little batch of cupcakes were not only delicious, they were a huge pain in the ass. I went to the store last night at like midnight to buy all the goods, only to find they were out of food coloring. I went to the other 24 hour grocery across town, and found what I needed, picked it all up and went home. The next morning I fire up the oven to preheat, and see that I’m out of cupcake liners (?!). I scrounged up enough from the back of the cupboard but was bummed because they were all mismatched and crappy. I carried on and got the dry ingredients whisked, got all the wet ingredients portioned out, and open my box of food coloring… there’s only two tubes. There’s supposed to be FOUR. Of course, the one color I needed wasn’t there, and I was left with a tube of green and blue.

Naturally, I flipped out and begged B to go to the store. He humored me (<3), and I had him pick up a fresh pack of liners, food coloring, and vegan cream cheese for the frosting (which I had realized that I forgot last night as well). He gets back with the goods, and I get everything all put in the oven and start on the frosting- just to figure out that I was also out of confectioner’s sugar. I was beginning to think these cupcakes weren’t in the stars. I did have some granulated sugar, so I attempted to make some in the blender which worked okay. My frosting came out a little grainy, but overall tasted great. After that, everything went smoothly and the decorating was easier than I anticipated. Jenny adored them and that’s the most important part!

    I’m in Theta Delta and Jenny looks a lot like the Jenny that brought ASA to Alaska.
    And the funny thing is: A bunch of the current sisters and I have been talking about getting matching ladybug tattoos!
